Karela Masala Recipe

Ingredients:
- 4-5 bitter gourds (karela)
- 2 onions, finely chopped

- 1 tsp coriander powder
- 1 tsp turmeric powder

Instructions:
- Wash the bitter gourds thoroughly and cut them into thin slices. Remove the seeds and keep the sliced bitter gourds aside.
- Heat oil in a pan and add cumin seeds. Once they start to splutter, add ginger paste and garlic paste. Sauté for a minute.
- Add the chopped onions to the pan and fry until they turn translucent.
- Add the chopped tomatoes and fry until the tomatoes are soft and mushy.
- Add coriander powder, cumin powder, turmeric powder, red chili powder, and salt. Mix everything well.
- Add the sliced bitter gourds to the pan and mix well. Cover the pan and cook on low heat for 15-20 minutes or until the bitter gourds are fully cooked and tender.
- Serve hot with roti, naan or rice.
