  • 4-5 bitter gourds (karela)
  • 2 onions, finely chopped
  • 2 tomatoes, finely chopped
  • 2 tbsp oil
  • 1 tsp garlic paste
  • 1 tsp ginger paste
  • 1 tsp cumin seeds
  • 1 tsp coriander powder
  • 1 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp cumin powder
  • Salt to taste

Instructions:

  1. Wash the bitter gourds thoroughly and cut them into thin slices. Remove the seeds and keep the sliced bitter gourds aside.
  2. Heat oil in a pan and add cumin seeds. Once they start to splutter, add ginger paste and garlic paste. Sauté for a minute.
  3. Add the chopped onions to the pan and fry until they turn translucent.
  4. Add the chopped tomatoes and fry until the tomatoes are soft and mushy.
  5. Add coriander powder, cumin powder, turmeric powder, red chili powder, and salt. Mix everything well.
  6. Add the sliced bitter gourds to the pan and mix well. Cover the pan and cook on low heat for 15-20 minutes or until the bitter gourds are fully cooked and tender.
  7. Serve hot with roti, naan or rice.
