Chicken Biryani Recipe

Ingredients:
- 1 kg chicken, cut into pieces
- 4 cups basmati rice

- 1 cup milk

- 1/2 cup chopped coriander leaves (cilantro)
- 1/2 cup chopped mint leaves
- 1 teaspoon red chilli powder
- 1 teaspoon turmeric powder
- 2 teaspoons garam masala powder
- Salt to taste
For the Marinade:
- 1 cup yogurt
- 2 teaspoons red chilli powder
- 1 teaspoon turmeric powder
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1 teaspoon garam masala powder
- Salt to taste
Instructions to Cook:
- Wash the rice thoroughly and soak it in water for 20-30 minutes.
- In a large bowl, mix all the ingredients for the marinade. Add the chicken pieces and mix well to coat them with the marinade. Cover the bowl with a lid or plastic wrap and refrigerate for at least 1 hour.
- In a large pot, heat the oil or ghee on medium heat. Once the oil is hot, add the sliced onions and green chillies. Fry until the onions turn golden brown.
- Add the chopped tomatoes and cook until they are soft and pulpy.
- Add the marinated chicken pieces to the pot and cook until the chicken is browned on all sides.
- Add the red chilli powder, turmeric powder, garam masala powder, and salt to taste. Mix well and cook for a few minutes.
- In a separate pot, bring the water and milk to a boil. Add the soaked rice and cook until the rice is half done. Drain the water and keep the rice aside.
- In the same pot, layer the chicken and rice alternatively, starting and ending with a layer of rice. Cover the pot with a lid and let it cook on low heat for 20-25 minutes or until the rice is fully cooked.
- Once the biryani is done, garnish with chopped coriander and mint leaves. Serve hot with raita or salad.
