  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 teaspoon sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 3 tablespoons plain yogurt
  • 1/4 cup milk
  • 2 tablespoons vegetable oil
  • 2 tablespoons melted butter
  • 1/4 cup finely chopped onion
  • 2 tablespoons finely chopped coriander leaves (optional)
  • 1/4 teaspoon nigella seeds (kalonji)


  1. In a large mixing bowl, combine the all-purpose flour, salt, sugar, baking powder, and baking soda. Mix well.
  2. Add the yogurt, milk, and vegetable oil to the bowl. Mix the ingredients together to form a dough.
  3. Knead the dough for about 5-7 minutes, until it becomes smooth and elastic. Cover the dough with a damp cloth and let it rest for 2 hours.
  4. After 2 hours, divide the dough into 6-8 equal portions. Roll each portion into a ball.
  5. Flatten each ball of dough with your palm, and then use a rolling pin to roll it out into a flat disk. The disk should be about 1/4 inch thick.
  6. Brush the top of each disk with melted butter, and then sprinkle with chopped onions, coriander leaves, and nigella seeds.
  7. Preheat a tawa or griddle over medium-high heat. Once the tawa is hot, carefully transfer a disk of dough onto the tawa.
  8. Cook the kulcha for about 2-3 minutes on one side, until it starts to puff up and becomes golden brown. Flip the kulcha over and cook it on the other side for another 1-2 minutes.
  9. Remove the kulcha from the tawa and transfer it to a plate. Brush the top of the kulcha with melted butter.
  10. Repeat steps 7-9 with the remaining disks of dough.
  11. Serve the kulcha hot with your favorite Indian curry or chutney. Enjoy!

  • The dough needs to be kneaded well for 5-7 minutes to develop the gluten and create a smooth texture.
